Hello everyone, I am a university student and this is another series of my recipes for vegetarian dishes: Today, I will show you how to prepare eggplant stuffed with vegetables super fast. This dish is very tasty different from the usual dishes, a perfect summer or winter recipe version. The filling of the aubergines inside is soft, and on the surface, it has a crust given by the grated bread. Try this dish, and you won’t regret it!

  • 1 eggplant
  • 2 tbsp grated parmesan
  • 25 gr Mozzarella
  • 1 zucchini
  • 300 gr cherry tomatoes
  • 1 tbsp breadcrumbs
  • 1 carrot
  • pepper to taste
  • ½ chopped onion
  • stalk of celery
  • Salt to taste

  • Vegetarian Stuffed Aubergines Recipe. Instructions on how to prepare it.
  • Peel the carrot and celery, and onion, wash all the vegetables. Wash the aubergine, divide it in half and empty it.
  • Cut all the vegetables into small pieces, including the inside of the eggplant.
  • In a non-stick pan, add Evo oil and stir-fry the onion. Combine the vegetables, salt, and pepper. Allow to flavor slightly.
  • Add half a glass of water and finish cooking. Once cooked, let the grains cool.
  • Add to the vegetables two tablespoons of grated Parmesan cheese, parsley, chopped mozzarella, and mix. Place the two parts of aubergine on an ovenproof dish, oil, and salt them.
  • Put the filling inside. Cover them first with a layer of grated Parmesan cheese (1 tablespoon), then with a sprinkle of Evo Oil.
