  • 2 kg of skin -on, bone, born chicken
  • 1 kg of halved and quartered gold and sweet potatoes
  • 2 tablespoons of EVO oil
  • 1 a teaspoon of dried oregano
  • 1 a teaspoon of dried parsley flakes
  • 500 g of Mushrooms
  • 4 tbsp Soy sauce
  • 1 garlic clove
  • Red onion halved quartered
  • Salt and pepper to taste

Instructions

Slow Cooker Recipes With Potatoes And Chicken

  • In a 6,5qt slow cooker, insert potatoes, broccoli, green beans, onion, and garlic, and oregano with two tablespoons of soy sauce.
  • Systematize chicken thighs on top of vegetables, and brush chicken skin with EVO oil.
  • Spatter thighs abundantly with salt and pepper. Sprinkle thyme and parsley flakes uniformly over thighs and vegetables.
  • Cover and cook for 5-6 hours, add mushrooms during the last 30 minutes of cooking.
  • OPTIONAL: Preheat oven to grill. Arrange chicken thighs on a baking foil, skin side up, and broil until crispy, for about 3-4 minutes
  • .Serve chicken immediately with potatoes, broccoli, and green beans, garnished with parsley or lemon. Serve hot and enjoy your meal. Buon appetito!

 This recipe calls for bone-in, skin-on chicken thighs, which I extremely suggest applying if you choose to grill the chicken at the very end to help crisp up the skin. But this is an entirely free choice, so it is best to use boneless, skinless chicken thighs (or boneless, skinless chicken breasts) if you choose to skip this. You can’t go wrong either way!
