  • 5 salmon fillet already cleaned
  • 1 kg potatoes
  • 20 gr tablespoons of extra virgin olive oil
  • Parsley to taste
  • Salt to taste
  • rosemary leaves
  • 20 cherry tomatoes
  • pepper to taste

  • Clean and peel the potatoes, then wash them under running water, divide them into halves.
  • Add the potatoes to a baking pan, season with salt, Evo oil, pepper, and parsley according to taste, then put to cook in the oven for 20 minutes.
  • After the time-lapse, season the fish with the prepared season just like the potatoes, now place the fish on the baking pan with the potato, and drizzle with extra virgin olive oil.
  • Cook in a preheated oven for about 25 minutes, then add the cherry tomatoes, cover with tinfoil and continue cooking for another 5 minutes.
  • Uncover, and continue cooking, turning the cooking to a ventilated oven for 2-5 minutes.
  • The food should be well cooked by now, bring it out and let it cool for a bit before serving with a glass of excellent white wine.
