Ingredients

  • 300 g of the all-purpose flour
  • 3 tablespoons of the baking powder
  • some salt to taste
  • 60 g cup of the coconut flour
  • 2 tsp tablespoons of the brown sugar
  • 2 tbsp of the unsalted melted butter
  • 1 golden egg whisked together
  • 2 cups of the almond milk
  • 3 tablespoons of the maple syrup
  • 1 tablespoon of the vanilla extract
  • 2 bananas peeled and diced
  • 20 g cups of the shredded coconut
  • some shredded coconut for garnishingSome sliced bananas for toppings

Instructions

Banana Coconut Pancake (the process)

  • Take a bowl add the flour, baking powder, salt, and sugar stir them to combine all the ingredients togetherThen add the whisked egg, vanilla extract, milk, and butter.
  • Stir them to combine well with a fork then fold this batter with mashed bananas and grated coconuts until well combined.
  • Now, preheat an oven to 450 degrees take a parchment-lined baking tray brushed with some melted butter pour the batter in pancakes shape, and make as many pancakes as you can.
  • Transfer the pancakes to the oven and let them cook for 8 minutes by flipping from both sides then remove them on a plate and then repeat this method with the rest of the batter.
  • Then top your pancakes with the sliced bananas and sprinkle some grated coconut.
