Perfect Sunday Brunch Idea

Equipment

Ingredients
  

  • Aubergine Whole
  • 50 gr chorizo
  • 1 Onion Medium
  • 2 Eggs
  • 4 tsp Olive oil
  • salt to taste

Instructions
 

  • Cut aubergines into slices and sprinkle them with salt, set aside, and place them in a kitchen towel.
  • Cut the chorizo into your desired shape
  • Dice the onion and fry with chorizo onion without oil. Remove and set aside
  • Then add oil to the same pan and fry aubergines until golden
  • Fry eggs (I baste my eggs and fry depending on how I want it. I like mine over easy to over medium)

Here is the recipe for my lunch that I had a couple of weeks ago. This will be a perfect brunch on a Sunday morning. Which I intend to do tomorrow.
 
So for lunch, I had fried eggs with aubergine, chorizo, swede, and roasted aubergine dip. This low carb and keto meal was mouth-wateringly delicious.

1 whole aubergine
50g chorizo
1 medium onion
2 Eggs
4 tbsp of oil (or more as aubergine does absorb oil)
Salt to taste
1. Cut aubergines into slices and sprinkle them with salt. Set aside. Then place in a kitchen towel
2. Cut the chorizo into your desired shape
3. Dice onion
4. Fry chorizo with onion without oil. Remove and set aside
5. Then add oil to the same pan and fry aubergines until golden
6. Fry eggs (I baste my eggs and fry depending on how I want it. I like mine over easy to over medium)
