Easy Vegetable Fried Rice

Materials

  • 200 gr White rice Or left-over white rice
  • 3 Zucchini
  • 2 carrots
  • 1 Red or Yellow Pepper
  • 80 gr Cherry tomatoes
  • 1/2 glass White wine
  • 1/2 chopped onion
  • 4 4 Peanut
  • 1 Minced garlic cloves
  • Pinch of black Pepe

Instructions

  • 🥕. clean all the vegetables accurately and cut in square shapes or as you desire, the important thing is that they should be cut or sliced.
  • 🥕.In the meantime heat a pan with 1 tsp of oil on a moderate flame, pour in the rice and start toasting.
  • 🥕.Add half glass of white wine and increase the flame until the wine evaporates.
  • 🥕. Then add some vegetable broth previously put aside. I always have some conserved vegetable and meat broth in the refrigerator.
  • 🥕. Cook the rice and continue stirring for i minutes.
  • 🥕. Spontaneously in a non sticky pan add 2 tsp of peanut oil, heat for some seconds, then add the minced garlic and onion then sauté.
  • 🥕. Add the rest chopped vegetables except the tomatoes, sauté for for about 6 minutes.
    🥕. Season with salt, pepe, and add the cherry tomatoes, simmer for 1 minutes.
  • 🥕. Now add the cooked rice and mix them well while still on heat for 2 minutes. Bring out from flame and serve.
