Ingredients
  

  • 140 gr   of the almond flour
  • 120 gr of the granola mix
  • 1 tbsp of the coconut flakes
  • 1 tsp of the maple syrup
  • 1 ½ cup of the almond milk
  • 1/2 tsp teaspoon ground nutmeg
  • 2 tbsp chopped peanuts
  • teaspoon of the coconut oil
  • 3 tbsp of Brown sugar
  • a pinch Salt

Instructions
 

  • Preheat an oven at 450 degrees F, grease, and flour the cupcake tray with a spatula brush.
  • Pour almond milk over granola and raisins in a bowl. Stir and cool to room temperature (about 20-30 minutes).
  • In a medium bowl, whisk gently together almond flour, baking powder, salt, and nutmeg, then add all the ingredients (except brown sugar and peanut oil), together and then stir them to combine well until a thick batter is formed
  • Cream peanut oil and brown sugar in a large bowl until creamy and fluffy
  • Now add the creamy and fluffy peanut oil and brown sugar mix until just moistened.
  • Spread batter evenly in prepared cupcakes pan.
    Bake for 25 to 35 minutes, until a toothpick or cake tester inserted in the middle, comes out clean.
  • Sprinkle some coconut flakes on them, cool cake. Turn out the cake on a wire rack and cool completely.
  • Top with a honey glaze, and your Crunchy Granola Cupcake Recipe is ready to be served and enjoyed with a cup of tea or coffee.

Notes

You can serve these Crunchy Granola Cupcake Recipe as breakfast and on teatime. I have added some coconut flakes to make them super crispy and delicious. In Italian restaurants or in the Italian cuisine fantasy always reigns. So the choice is yours! Different types of flour can be used here, coconut flour, all-purpose flour. Any flour of your choice is welcome in this recipe! Not only this, you can add some chopped fruits in them to give it a total fruity and more healthier flavor. You can top them with some peanut butter as well if you like it. Anyway, the choice is yours!
